Melissa recommends this eggplant, tomato, and zucchini casserole. If you’ve been our member for awhile, you might remember Melissa’s epic recipe spreadsheet. She says a lot of it is behind paywalls now, but it’s still impressive.

For big bunches of herbs
basil vinaigrette - Great on a summer salad, or just drizzled over tomatoes.
lentil walnut pate - this isn't centered on herbs, ingredient-wise, but I find that it's great with even more than the recipe calls for, especially with parsley, basil, and dill
dill dijon salad dressing - this is a repeat from the Owl’s Nest newsletter, but not since 2021 and I love it/bookmarked it for whenever I get dill and salad greens
For tomatoes
Tomato corn pie - I made about 8 of these last summer with Owl's Nest tomatoes, while recipe testing for the state fair.
Tomato jam - I think this is supposed to be done with roma or other sauce/paste tomatoes, but I made this with sungolds and it was still great

- Vegetarian borscht with beets and cabbages
- For radishes - pickled and radish green chimichurri

Blackened shrimp with summer vegetables - love this, with or without the shrimp; it basically becomes a succotash, and you can add and subtract any veg you choose
Summer basil tomato and pine nut sauce - super versatile sauce; Voraciously’s most-read recipe of the year in 2019*
Southern collard and sweet potato hash - more of an early fall option, but an alternative preparation for collards
Kohlrabi fritters - something fun to do with kohlrabi!
Greek salad with couscous and lemon - Ali Slagle always delivers the goods
Sheet pan peppers, feta, tomatoes - A party, for all those sweet peppers
